
Turkish lentil soup recipe
In these days of chilly autumn we recommend you the traditional Turkish lentil soup! The lentil soup is the staple soup served in almost all Turkish restaurants and is eaten with two or three drops of lemon. The Turkish name is “mercimek çorbasi“.
INGREDIENTS
- 250g red lentils
- 1 onion or 2 small cloves garlic
- 1 carrot
- 1 table spoon tomato puree (or 2 fresh tomatoes)
- 1 tea spoon paprika
- 1 tea spoon turmeric (optional)
- 1 tea spoon cumin
- salt and pepper to your taste
- some fresh coriander for garnish
PREPARATION
Chop the onion and carrot. Cook in some olive oil and add the pieces of garlic.
Rinse the lentils and then drain all the water. Add it to the mixture.
Also add the tomato and spices.
Mix well. Add 1.5L of hot water, stir and cover. Simmer for 20 to 25 minutes.
It’ll just mix (you may use a blender). And do not forget to add some fresh coriander just before serving!
For some decorative sauce, fry some dried mint and paprika in little butter and pour this mixture onto small bowls of lentil soup.
